Hot and Sour Soup | 酸辣湯





Ingredients :
  • Carrot 
  • Shiitake mushroom 
  • Enoki mushroom
  • Enokitake mushroom
  • Scallion
  • 1 egg
  • Cornstarch 
  • Cilantro 
  • Soft tofu
  • A cube of chicken stock 
  • Salt
  • Black vinegar - 3 tbsp
  • Light soy sauce - 2 tbsp 
  • White pepper - 2 tsp(depends on how hot and spicy you want) 
  • Water - 1 litre

Procedure:

1. Cut carrot, tofu, mushrooms and scallion into shreds. 
2. Beat the egg. 
3. Fry the carrot and mushrooms 
4. Pour the water into the pan and add in a cube of chicken stock. 
5. Close the lid. 
6. Wait for the water to a boil. 
7. Add some salt. 
8. Pour the Vinegar. 
9. Light soy sauce. 
10. Add white pepper. 
11. Pour vinegar and light soy sauce in. 
12. Pour the cornstarch then beatem egg. Stir well to slowly thicken the soup. 
13. Add the soft tofu in. 
14. Lastly, is to add the scallion into the pot. 
15. Stir well and is ready. 
16. I will garnish with Cilantro. 

P. S. A simple and ready ingredients that I have to make this soup. You can add others ingredients such as black fungus, Chili oil, shredded chicken and etc. to make it more flavourful soup. I'll definitely always make this soup and improve better.
